Because for us knight(like in the old age) is a person who ride a horse, so the literal translation in English of "caballeros" is horsemen, and "vaquero" comes from "vaca"(in English cow) the meaning is very similar to the word in English, men who deal with cows.

They still teach it but no one cares about it any more... I'm more or less fluent but I'm part of a minority.

There are thousands who speak it still, but thousands arent many on a global scale.
