Is it a coincidence, or do I get more magic skillups based on the fiend? For example, it seems like I get more frequent skillups against crabs than against birds.

Do you get skillups based on the damage that you do? If so, has someone ranked fiends by amount of magic resistence?

Level is the only influence as far as mob target is concerned. You can get skill ups from 0 damage elemental magic. Enfeebling magic has to land successfully, but that's what dia is for.
