It sounds like you're not getting far enough away from the hellmines before resummoning. After sending Carby in to fight at the start of the battle, run away from the bomb until you don't hear the battle music playing anymore - and then run several steps further. The idea is, after Carbuncle dies, you want to have enough time to resummon him and be finished casting (or close to being finished) before you hear the battle music start playing again. But be careful - if you run too far, the bomb will give up and despawn. You'll have to play around with the distance until you get it right. The battle music is the key - it gives you an indication of hate range. Anything you do within that range will add to your enmity, making it harder for Carbuncle to hold hate.
Something else you might want to consider, is heading to Vunkerl Inlet [s] at the beginning of Iceday and fighting Djinns. I don't know if you've ever tried Djinns before, but the idea is to use Shiva on Iceday, and Ramuh on Lightningsday. In either case, you summon your avatar, use their spikes ability (Frost Armor or Lightning Armor), and then send them in to fight a Djinn. Then you run to a safe distance and wait to resummon, just like you do with other bombs. When you resummon, give your avatar spikes again (try to do this before you hear battle music), and again run to a safe distance. Before long, the elemental damage the Djinn takes from your avatar's spikes will trigger its' elemental TP bonus - which means the Djinn will instantly have 100% TP, and have a chance at blowing up sooner. Sometimes, the very moment your avatar begins fighting a Djinn, the Djinn will blow. It can be extremely fast XP, and very easy to XP-chain. There is a very good camp in Vunkerl Inlet [s] right near the zone to Jugner Forest [s] with a bunch of Djinns nearby - there are plenty of targets, and a good amount of kiting room. And if anything goes wrong (such as running low on MP because of a stubborn Djinn), the zone is only a short run away. You can very easily start camping here at your level. I did, and it took all the way to 70.
