Your hardware is more than adequate to run FFXIV even with that 560m mobile video card. If I had to guess why it is running choppy, i'd look at drivers. I see you are on a Sandisk Ultra 120GB SSD, and the laptop as far as I am aware didn't come stock with that drive, so i'm guessing you probably reloaded windows on it. I'm wondering if maybe you are running on the default system video drivers rather than the actual drivers for the video card.

Try going to asus.com and searching for the driver section for the G74SX-BBK9 and updating all your drivers, particularily the sound, video network and chipset drivers. If that doesn't do the trick, see if you can install the latest video driver from nvidia.com. If it still has issues, verify that the FFXIV installation folders are indeed on the SSSD and not on the 500GB drive. Also run it through windows update, make sure .net and directX is fully updated, etc.

If it still won't run right, you may possibly be looking at a bad ram module, or possibly somethign running on the machine that is causing problems (virus, etc)

I'd start with the drivers though first. Also make sure it isn't overheating due to inadequate airflow/

I hate to break it to you buy you are underspeced for FFXIV.

Recommended specs for FFXIV are

Intel core 7 at 2.66GHz
4 gig ram
Geforce 460 discrete

These are the recommended specs for drum roll

1280x720

My suggestion is turn down your video resolution.
