As a Shadow Priest it would be nice to have a macro where I can cast a heal on myself(instant) and then go back to shadow. I can do it with 2 clicks, but was wondering if it can be done with one click.

No, because the global cooldown on the heal keeps you from instantly going back into shadow form.
Athu, if you are an Herbalist or a Draenei you can do it by using Lifeblood or Gift of the Naaru... but that is not really what you are asking lol.
I actually recommend using Troll's Blood Potions. Those things are just so awesome for keeping downtime to a minimum when you are on a Shadow Priest.
