I learned the hard way to stock up on poisons before entering an instance. I thought 10 instant would be enough to carry me through as the combats started lasting longer and the poison procs started ticking away I found myself running out of poison well before the cool down period. Needless to say, you can't simply pop off and get a refill when you run out, and my damage dropped noticeable once the poison was gone.

So if you use poison, remember to keep a good supply on hand, especially if you are running off into an instance.

I tend to keep 20 crippling, 20 deadly II, and 10 mind numbing on me. Sometimes more of the crippling(its cheap to make and extremely useful!).
Mind numbing is a life saver against casters as it slows their casting down to where you have a good chance of kicking them or getting a kidney shot off before they get their spell off(Best for elites and bosses, like the chick who res' in Scarlet Mansion), crippling slows down how fast they can run away and how fast they hit you, and deadly I keep for thore many fights that are mainly melee.
I've noticed the ammount of damage I take is directly relivant to whether or not I use the poisons. *grin*

Mind numbing poison is a waste of resources anywhere other than caster bosses (like Doan in Scarlet Monastery). Since bosses cannot be stunned or interrupted while casting, it's pretty much the only excuse to use that poison. Whitemane in SM doesnt cast anything damaging enough to warrant casting time reduction... and as far as I remember you can't stun her either. Deadly psn is worthless anywhere anytime. DoT in 10sec battles, no thanks. Crippling poison is awesome for pretty much every instance, so keep it on main weapon, as when you pull (hopefully you are the one pulling) you get a chance to slow them down on their way back and not get owned while running back to your party. Then again, if the sap timer is running, that might not be such a good idea.

Instant Poison is the only poison worth your time essentially, as it deals poison dmg instantly and stacks very nicely with fast weapons like daggers or fastest swords.

Having said that, the above only applies to PvE. PvP is a completely different story. ^^
