Is it possible to switch between classes? For example if I started as a Druid can I switch over to being a Hunter whenever I want or vis versa?

The way to change classes is via the character creation screen.

Simply put, no. This is not FFXI. If you want a new class, roll a new character.

at trainers I've seen the option to unlearn all not sure what this does.. But sounds like it might

That is to unlearn Talents.
As ChahDresh put it: This is not FFXI.
If you want to play both Druid and Hunter you make 2 characters, which, since this is not FFXI, does not cost and extra $1 ^^.
