My brother and I are looking to form a 2s team just to try and get to conquest cap each week. Neither of us are exactly stellar in the arena.
My brother is limited to a mage for his half. I have the following to choose from:
Mage - Only character I currently have pvp gear for
Hunter
Rogue
Death Knight
Druid
Paladin
Warrior
We don't have plans of pursuing a 2200 rating. Honestly, we probably wont get over a 1,000. Out of what I have available what would be best to pair up with his mage to help keep us from just aboslutely getting steamrolled.
I have enough gold saved up to buy a suit of the current crafted pvp for any of my characters to help them get started.

We ended up going Rogue/Mage and it isn't going too well. Right now were going on about 35minutes trying to kill a disc priest. Not a priest and her partner. Just the priest she queued alone.

That priest is special in so many ways. 
Also I know it's late but I'd choose Druid. At least the good thing about 2 DPS classes as you have now is you tend to have quicker battles. Nice for grinding points and such.

Well we ended up winning enough to get our point cap and we learned a few things. Like that my brother cannot CC anything to save his life or mine for that matter and that our team has alot of problems with shared diminishing returns.
I have managed to get my rogue all of his pvp weapons, trinkets, and conquest gloves. But that only took about 3 days so I can switch over to my druid and see if that helps.
Both of our characters have about 3.2k resil. My brother did finnaly respec to frost and we went from 0-6 to finish at 8-14.
