Starting stats make no difference in the long run. In Everquest, classes started with differences of up to 40, and the maximum stats could go up to, and often did with raid equipment, was 255. In WoW, there is no ceiling, but the starting differences are about 5 points, so gear balances them out even more. So picking a race off starting stats is even less important than it was in Everquest.
Humans have a bonus to using swords and maces. That can be worthwhile to a rogue that doesn't force themselves to wield daggers. Some skills do require a dagger in main-hand, but there are some rogues that dual wield maces for the related mastery talents.
Really just a matter of style. I don't play my Night Elf Hunter, who doesn't have the gun mastery bonus dwarves do, with a traditional hang-back-and-shoot style. Instead I go melee and make use of my dodge bonus for an increased chance to trigger Mongoose Bite. Sounds silly, maybe, but it works. The rogue example is far more viable.
