mages tend to account for the largest proportion of PvPers. Rogues close second. I guess it's the ability to stealth upto targets and gank them unawares...
I play a shaman (lvl 23 atm), and I've had good success in PvP. If it's a single fight 1v1, versus a player within 3 levels of me, I will win. I've been jumped by mages 4 levels higher than me and won. (When I get jumped by two mages 4 levels higher than me, I loose tho)
Shamen are an excellent pvp class with alot of tools for fighting most other classes strengths.
The other day I was out hunting alliance players in Ashenvale at level 22. Took out a level 25 warlock, I even let him summon his pet before engaging. Took out a level 26 Warrior (allowed him to heal to full before engaging, sat down in front while he regened). Took out a level 25 Mage though it wasn't a clean fight - the mage got jumped by a wolf part way though. :/ Took a 20 Priest, and finally had to flee with a level 33 paladin chasing me. Got killed when I got stuck on a tree by a 30 mage :(
PvP makes the game really enjoyable for me. Nothing like hunting away in Stonetalon, right next to the Alliance base, soloing mobs 3 levels higher than me, and needing to end each fight at 80% health, to be sure I can assess any pvp fights that occur. Makes it all more exciting.
There are imballances, Hillsbraad, general Horde lack of quests, etc. I'm sure they'll be fixed tho.
