For my WHM relic quest, I have to meld 2 quicktongue III, all the guilds said I just need to level a crafting profession to 19 to get the quest that grants the ability to meld materia to items.
but is this misleading? do I need to level a specific craft to attach materia to say weapons?
did I make a mistake is leveling carpenter when my relic requires attaching materia to my weapon?
or does it not matter which I level, it's the level that matters?
Ok so Carpenter makes staffs, so I'm good with that professions for melding material to that weapons?

You can get the quest that unlocks the ability to meld materia with any DoH class, but you need the right craft to do the actual meld based on the item you are melding onto. Madman's Whispering Rod is an alchemy item, so you have to be an Alchemist to attempt the meld.
I don't remember if your level as an Alchemist limits what you can meld. I don't know if you would be able to do the meld as a lvl 1 Alchemist, or if you would need to be higher based on the tier of materia you are melding, or even based on the level of the item you are melding to.
Edit: when I said any DoH class, I should say any DoH class other than culinarian. You never meld materia to food!

So if you look at the Madman's Whispering Rod, it'll say down at the bottom that you have to be a level 50 alchemist to meld materia to it.
Your best bet is to ask around and see if someone will do the meld for you (plan to supply the materia). Alternatively, a lot of the time the melded weapon is sold on the market board. Just make sure that you're buying a weapon with the correct melds (2 Quicktongue III's).

Or /shout. I would try Mor Dhona. Are you in a LS or FC? You could start there. Many established players will have multiple (if not all) DoH classes at 50.

Which is too bad because the results could be hilarious when your customer eats the melded meal and gets the status condition 'broken teeth.'
Of course it could be worse. Imagine desynthing food back into the living form of what it was made from, desynth a rabbit meatball, get a live rabbit thinking to itself "WTF!?"
