Server wise, I would just choose whatever has the best ping for you. It says in the upper right corner how the connection is. Most servers will specify EU, NA, JP, etc, after that it's just a matter of choosing a legacy server, newer server, or server created around release of ARR. Legacy servers tend to have the highest population, so some of them are character locked. Someone else might be able to chime in with better advice on this topic, I was on Balmung and haven't budged. I sure every NA server has a helpful FC on it, just a matter finding which.
White Mage is always needed for just about any fight in the game, and Duty Roulette makes it so that just about any dungeon is able to be completed within a reasonable time frame. That being said, some of the story dungeons still require a 30-45 min wait time for a full party. The beauty of white mage (in my opinion, this will vary), is it really makes you understand the full mechanics of a fight, which in turn makes it (again in my opinion) the hardest job to do. Tank needs to understand most mechanics, but not all. DPS just needs to do a decent rotation to be effective.
As for KB vs Controller, you'll get lots of varied responses here. I use controller, love it and cannot get used to keyboard to save my life. People who have been using Keyboards since the days of EQ, WoW will probably say controller is horrible and too limited in terms of function. Honestly, use whatever feels easier to you, both are highly effective in the end. On pc, you can still set macros with a controller, so things work out in the end.
