I still don't understand the mechanics

Once the prerequisites are fulfilled, (Assuming it's the same in 2.0) you can access the quest to unlock the appropriate job. Jobs are more powerful than classes and are more oriented for party play, with no cross-class/job ability allocation. Classes can have other abilities from classes equipped, and are better suited for solo play.
