So last time i play was about a year and a half ago, and i've been watching some videos on all the new things in the game and it's pretty overwhelming so i have a few questions to ask. Is empyrean armor still relevant or is reforging artifact armor the way to go now? What are some things i should and/or need to do ASAP? Is seekers of adoulin something worth buying or can i play the game and still enjoy it as much as a i did a year and half ago without it? Any other tips or advice you'd like to give would be much appreciated. On leviathan btw.

Depending on the job, the JA augmenting attributes of some empyrean armor is still very useful. Sets now are usually a combination of reforged AF/relic, and armor from new events. First priority should go to acquainting yourself with the Records of Eminence system that will give you fast and cheap access to iLvl 117 Eminent gear. That'll hold you over until you can get some good 119 stuff. Then start gathering Trusts (look that up too). Those things will get you back in the game very quickly.
Also yes, buy SoA. It's excellent and you'll be missing a lot without it.

Thank you for the advice! I really want to get somewhere with my paladin but i'm not sure if its possible considering the only other 99 i have is war and it has nothing special on it. What job(s) should i get to 99 that would help me progress back into the game faster? (anyone else can answer this too)

I haven't been playing much but I think BRD is still good for getting into groups.

Really? I did not know of that, i'm not really into brd but good to know. I like any DD jobs really so any suggestions there would be good.

You won't be winning any parses with PLD, but they're still welcome as a safety net in a lot of endgame stuff. If you do plan on using PLD as a "main", put some serious thought into making an Aegis if you haven't already.
As for other jobs you can use in the meantime, WAR (again, equipped in purely eminent gear) will do just fine for any farming activity you'd want to do, with the exception of certain hard-mode BCs. Also for your WAR, look up the Minos GAxe. It's not difficult to get- just requires some gil, and is regarded as one of (if not THE) best GAxe in the game.
If you feel so inclined to level another job just to gear the ones you care about, you can do so. However I'd argue that with the effort you'd put into leveling and gearing those to an "acceptable" level, you could have made equal strides on the jobs you care about by just using and farming with them.
