Going from memory, please feel free to correct me if I'm wrong:

AGI - Affects evasion and ranged combat accuracy
DEX - Affects hit rate (melee combat accuracy)
VIT - Improves defense
STR - Improves attack
MND - Improves healing ability, enhancements, and spell resistance
INT - Improves spell damage and enfeeblements
CHR - Improves song effects and lowers/raises buy/sell prices from NPC

Two points in each stat raises the corresponding ability by one point. EX: a piece of armour that provides +2 agility will increase your evasion by +1

This is how I understand it anyway, point out corrections, changes as necessary, or add stats that I forgot about.

Stole some info from: http://thatffxisite.com/creation.asp
You might read that page, good info there for you.

I'll also add some comments.

STR (Strength)
Determines the damage dealt by you.
(Bread and butter of any Melee class, especially a MNK or DRK)

DEX (Dexterity)
Determines how often you will hit your opponent.
Increases Critical attack rate (The higher the DEX the less often the opponent will critical and the more often you will).
(Focus on boosting this if you're a melee with a slow weapon, especially an Elvaan with a slow weapon.)

VIT (Vitality)
Determines your Defense vs. Melee.
(An area of interest for WAR and PLD)

AGI (Agility)
Determines your dodge rate.
Increases Accuracy from long range attacks.
(THF's bread and butter attribute. Also effects ranged accuracy, so RNGs are big into this.)

INT (Intelligence)
Determines the power of your Black Magic.
(BLM)

MND (Mind)
Determines the power of your White Magic
Increases magic resistance
Increases abnormal status resistance.
(WHM, PLD)

CHR (Charisma)
Determines your success rate of CHR based spells.
(Great for Bards and Beastmasters)

As you go through the list you'll see that most Job's effectiveness really pivots on one or two main stats. So for whatever Job you have you can really do a lot better by focusing on buying equipment and eating food which boost those stats (even if you take a hit to a less important area, like a MNK or DRK using a Spike Necklace, it's worth the MND hit for extra STR and etc). If you really know what kind of Job you want to specialize in: it helps even more to pick races that have a latent advantage with those specific stats. (Otherwise, be a Hume, and use Stat boosting items to make you “pretty good” in any field you want).
