What are some of the newest servers? (Providing some have been added within the past year...
I'm looking to start anew in EQ and would like to find a server that isn't packed with ultra-high level players. Not that there's anything wrong with that!

They don't have new servers any more. SOE merged almost all the servers to help with the population.
I don't think you'll find a server that isn't packed with high level players. That doesn't mean you won't find a healthy population of lower players either though.
Povar is the only server I play on and seems to have a decent low population.

U believe that the 2 newest are stromm and Maelyn Strypee (spelling).

not really.
FV is a low population server, and its not uncommon for the tutorial to have 50+, as well as quite a few groups a bit more spread out in higher xp zones.
i second Sir Groogle, on stromm i have no trouble finding groups at any level. povar(morden rasp) also seems to have a decent lower level population.
