As far as I can tell from experience, only one stat-food buff is available at a time.

So, if you have an active stat-food buff and eat another kind of stat-enhancing food, the latter will override the first one.

However, potions and/or scrolls will stack with existing food buffs (same stacking rules apply to potions and scrolls - only one can be active at a time), so you can get three active buffs from consumable items at a time.

Just a reminder if you play a pet-class (hunter, warlock, etc.): pets only get the healing and/or happiness from food, not the stats.
